Curried Chicken Salad Recipe
Ingredients
| Orange | 1 Large | |
| Banana | 1 Medium | |
| Salad greens | 4 Cup (16 tbs) | |
| Cooked and cubed chicken | 2 Cup (16 tbs) | |
| 1/2 of an 8-ounce can (1/2 cup) jellied cranberry sauce, chilled and cut into 1/2-inch cubes | ||
| 1/4 cup light raisins | ||
| Salted peanuts | 1/4 Cup (16 tbs) | |
| 1/2 cup mayonnaise or salad dressing | ||
| 1/2 cup orange yogurt | ||
| Curry powder | 1 Teaspoon | |
Directions
Section orange over bowl to catch juice.
Slice banana diagonally and dip in reserved orange juice.
Place salad greens in large salad bowl.
Arrange orange sections, banana, chicken, the cranberry cubes, raisins, and peanuts atop greens.
For dressing, combine mayonnaise, yogurt, and curry.
Toss salad to serve; pass dressing with salad.
