1. In a small saucepan cook rice, as per label directions and cool to room temperature.
2. In a medium-size bowl combine with apple, chicken, almonds and onion.
3. In a cup blend the remaining ingredients, stir into rice mixture and chill.
4. Serve with a garnish of red apple slices, if desired.
