Curried Chicken Calcutta Recipe
Ingredients
1/4 cup all-purpose flour
1/2 teaspoon curry powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
2 whole chicken breasts, split, skinned and boned
1/4 cup vegetable oil
1 cup plain yogurt
2 tablespoons lime juice
Peel of 1 lime, grated
Lime slices and mint sprigs, for garnish
Directions
Combine flour, curry powder, cinnamon, ginger and garlic powder in shallow dish.
Add chicken, one piece at a time, dredging to coat.
Heat oil in large skillet over medium heat.
Add chicken; cook until brown on both sides.
Cover; reduce heat to low and cook 15 minutes or until chicken is tender.
Combine yogurt and lime juice in small saucepan.
Cook over low heat, stirring constantly, until warm.
Arrange chicken on serving platter.
Spoon about one half of the yogurt sauce over chicken; sprinkle with grated lime peel and garnish with lime slices and mint.
Pass remaining sauce.
