3 tablespoons each salad oil and curry powder
 
2 large mild onions, chopped
 
3 tart apples, peeled and chopped
 
3 cloves garlic, minced or pressed
 
2 tablespoons dry mustard
 
1/2 teaspoon ground ginger
 
1 1/2 teaspoons salt
 
1/4 teaspoon liquid hot pepper seasoning
 
1 1/2 cups regular-strength chicken broth
 
1 can (12 oz.) frozen coconut milk
 
4 whole chicken breasts, skinned, split, boned, and cooked

Directions

Heat the oil in a 5-quart Dutch oven over medium heat.
Add curry powder, onion, apple, and garlic; cook and stir until onion is limp.
Stir in the mustard, ginger, salt, hot pepper seasoning, broth, and coconut milk.
Cover and simmer 30 minutes or until apples are tender.
Add cooked chicken breasts, cover, and simmer until chicken is heated.
