Curried Celery Soup Recipe
Ingredients
| Butter/Margarine | 3 Tablespoon | |
| Celery stalks | 4 , finely chopped | |
| All purpose flour | 3 Tablespoon | |
| Curry powder | 1 1/2 Teaspoon | |
| Salt | 3/4 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| Milk | 2 Cup (16 tbs) | |
| Water or chicken broth | 4 Cup (16 tbs) |
Directions
1. Melt the butter in a 3-quart saucepan over moderate heat. Add the celery, and cook, uncovered, for 5 minutes, or until crisp-tender, stirring occasionally.
2. Remove the pan from the heat, and blend in the flour, curry powder, salt, and pepper to make a paste. Gradually stir in the milk and water.
3. Return the mixture to the heat and stir constantly until it comes to a boil. Reduce the heat, cover, and simmer for 10 minutes.
