Classic Curried Cabbage Recipe
This curried cabbage recipe is a flavorful vegetable curry. Prepared with added yellow onions, this simple curry goes great with rice, pulaos and indian flatbreads too.
Ingredients
1 small head cabbage
1 tablespoon unsalted margarine
2 teaspoons mustard seeds
2 medium size yellow onions, sliced thin
2 teaspoons curry powder
1/4 cup water
Directions
Cut the cabbage into wedges, cut out and discard the white core, and slice each wedge 1/8 inch thick; set aside.
In a heavy 12 inch skillet, melt the margarine over moderate heat; add the mustard seeds and cook, covered, for 30 seconds or until they begin to sputter and pop.
Add the onions and cook, uncovered, until soft about 5 minutes.
Stir in the curry powder and cook for 1 minute.
Add the cabbage and water, cover, and cook, stirring occasionally, for 15 minutes or until the cabbage is tender.
