Curried Beef With Vegetables Recipe
Ingredients
2 slices bacon, cut in small pieces
2 tablespoons butter
1 medium sized onion, sliced
2 pounds round steak, cut in 1 -inch cubes
1/2 cup flour mixed with 1 teaspoon salt
1/4 teaspoon pepper, and 1 1/2 tablespoons curry powder
Water
2 bay leaves
1 cup each diced celery and diced carrots
2 cups cubed potatoes
1 cup fresh or frozen green peas
1 tablespoon lemon juice
Directions
In a heavy kettle or Dutch oven, cook bacon, butter, and onion until the onion is golden brown.
Remove onion and bacon with a slotted spoon; set aside.
Dredge the meat in the seasoned flour and brown well in the fat remaining in the pan.
Sprinkle meat with any of the flour mixture left over, add water to cover, bay leaf, and the onion and bacon.
Simmer for 1 hour, or until meat is nearly tender, adding more water if needed.
Add celery, carrots, and potatoes, and cook until vegetables are done and meat is tender.
Add the peas during the last 10 minutes.
Remove the bay leaf, add lemon juice, and thicken the gravy, if desired
