Curried Beef Recipe

Ingredients

 
2/3 lb. beef flank steak or other tender beef
 
Marinade:
 
1 tablespoon soy sauce
 
1 teaspoon sugar
 
1 teaspoon cornstarch
 
1 teaspoon sesame oil
 
1 tablespoon vegetable oil
 
1/2 teaspoon baking soda
 
1 fresh carrot, peeled
 
1 lb. potatoes, peeled
 
3 cups boiling water
 
5 tablespoons vegetable oil
 
1 medium onion, chopped in 2/3-inch cubes
 
1 tablespoon curry powder
 
1-1/4 cups water
 
1 teaspoon salt
 
1/2 teaspoon sugar
 
2 tablespoons sesame oil

Directions

Use a cleaver to slice beef across grain and at an angle into thin strips.
Cut strips 2 inches long.
Mix marinade ingredients in a small bowl.
Add beef strips; mix well.
Let stand 30 minutes.
Cook whole carrot and whole potatoes 5 minutes in 3 cups boiling water; drain and let cool.
Chop cooked carrot into thin slices and potato into diagonal slices 1/3 inch thick.
Heat oil in a wok over medium heat 1 minute.
Stir-fry onion 3 or 4 seconds.
Add curry powder and chopped cooked carrot and potatoes.
Stir-fry 30 seconds.
Stir in 1-1/4 cups water, salt and sugar.
Cover wok, reduce heat to low and simmer 10 minutes or until vegetables are tender.
Place marinated beef on top of vegetables.
Cover, turn heat up to high and cook 1 minute.
Sprinkle sesame oil on top of beef; mix well.
