Currants Luscious Recipe

| Loganberries | 1 Quart | |
| Strawberries | 1 Pint | |
| Black cherries | 1 pound, pitted | |

Directions
GETTING READY
1. Wash red currants; if desired remove stems.
2. In a large saucepan, mash currants slightly to extract juice and then cook slowly until they look white.
3. In a jelly bag, drain currants and measure juice.
4. For every 1 cup of juice, add 1 cup sugar and mix.
5. Weight remaining fruits in pounds and for every pound of fruit, take 2 cups sugar.
6. In a large bowl, place fruits, add sugar on top and pour sweetened currant juice over it; let stand overnight.
MAKING
7. Next day, in a saucepan, boil the fruit, sugar and juice mixture for 15 minutes.
FINALISING
8. Into hot sterilized jars, ladle mixture leaving 1/8 inch empty on top.
9. Using a clean and dry kitchen towel, wipe the rim of jar and adjust lid.
10. Into a canner of boiling water, place the jars and process for 5 minutes.
11. Remove jars and place over a clean towel.
12. Let the jars cool down and seal completely until they are self-sealing type.
