Currant Tartlets Recipe

Ingredients
18 unbaked tartlets
1/3 cup dried currants
1 tsp low-calorie margarine
1/3 cup granulated brown sugar
1 egg white, slightly beaten
1/4 tsp vanilla extract
Directions
Wash currants and then cover with boiling water.
Allow to soften for 5 minutes and then drain.
While still hot, stir in margarine, brown sugar replacement, egg white, and vanilla.
Divide mixture evenly among the 18 tartlets.
Cover tardets loosely with aluminum foil.
Bake at 350°F (175°C) for 15 minutes; then remove aluminum foil, reduce heat to 300°F (150°C), and cook for 10 more minutes.
