Cumberland Sauce Recipe

Ingredients
| Shallots | 5 , finely chopped | |
| Peel and juice of 1 orange (cut peel julienne) | ||
| Peel and juice of 1 lemon (cut peel julienne) | ||
| Currant jelly | 1/2 Cup (16 tbs) | |
| Port | 1/2 Cup (16 tbs) | |
| Dijon Mustard | 1 Teaspoon | |
| Pinch of ground ginger | ||
| Ground red pepper | 1 Pinch | |
Directions
Combine shallots, citrus peel and juice in small saucepan.
Place over low heat and simmer 10 minutes, stirring frequently.
Add remaining ingredients and simmer 10 minutes, stirring occasionally.
