Cumberland Sauce Recipe

| Red currant jelly | 1 Tablespoon | |
| Onion | 1 Tablespoon, grated | |
| Port or red wine - 1/4 pint | ||
| Nutmeg - pinch | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1. Melt red currant jelly and grate rind of lemon and orange.
MAKING
2. In a pan add rind and juice, grated onion and rest of ingredients and bring slowly almost to the boil.
3. Cover and infuse for 10 minutes.
SERVING
4. Serve preferably on venison, ham or meat.
