Ingredients

 Cucumbers1 Cup (16 tbs), peeled, finely chopped
 Salt1/2 Teaspoon
 1 tbsp.sugar
 1 tbsp.cider vinegar
 Ground white pepper1/8 Teaspoon
 Whipped heavy cream1/2 Cup (16 tbs)

Directions

Combine cucumbers and salt; cover.
Refrig erate for at least 1 hour.
Drain; add sugar, vinegar and white pepper.
Fold in cream just before serving.
