Easy Cucumber Sauce Recipe
Ingredients
1/4 cup shortening
2 tablespoons flour
2 cups milk
3 egg yolks, slightly beaten
1 medium cucumber, pared, seededand diced
1 can (4 1/2 ounces) shrimp, rinsed drained and coarsely chopped (1 cup)
1 teaspoon salt
1/4 teaspoon nutmeg
1/8 teaspoon pepper
Directions
Melt shortening in medium saucepan.
Blend in flour.
Cook over low heat, stirring until mixture is smooth and bubbly.
Remove from heat.
Stir in milk.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.
Remove from heat.
Stir at least half the hot mixture into egg yolks.
Blend egg mixture into remaining hot mixture.
Boil and stir 1 minute.
Stir in remaining ingredients; heat through.
Serve warm.
