Cucumber Rounds with Blue Cheese Spread - cucumbers never tasted this yum to me! The richness of blue cheese just make those cucumbers taste heavenly. The recipe for blue cheese spread is way too easy and you can preserve the excess spread too!
Ingredients
| Blue cheese package | 2 , softened | |
| Cream cheese | 1 , softened | |
| Butter | 2 Tablespoon, softened | |
| Worcestershire sauce | 1 Tablespoon | |
| 3 To 4 Cucumbers | ||
| Salted peanuts | 1 Cup (16 tbs), finely chopped | |
Directions
The day before serving:
In a medium mixing bowl, combine blue cheese, cream cheese and butter; mix until well blended.
Add Worcestershire sauce, mix well.
Cover and refrigerate.
On serving day:
Slice cucumbers 1/4-inch thick, making about 100 rounds.
Pat cucumber rounds dry with paper towels.
Spread about 1 teaspoon cheese mixture on each cucumber round, sprinkle peanuts on top.
To transport or keep until serving time, place rounds in a waxed paper-lined container with waxed paper between layers.
