Cucumber Relish Recipe
The cucumber relish is prepared with cucumbers, cabbages and peppers along with onions. Seasoned well, it is cooked vegetbales of choice with sugar, mustard and vinegar for flavor and added turmeric for color and spice
Ingredients
| Cucumbers | 10 Large | |
| 1 small to medium cabbage | ||
| Onions | 6 | |
| 6 green or red peppers | ||
| Sugar | 9 Cup (16 tbs) | |
| Mustard seed | 1/4 Pound | |
| Vinegar | 1/2 Gallon | |
| Flour | 2/3 Cup (16 tbs) | |
| Dry mustard | 1/2 Cup (16 tbs) | |
| Turmeric | 1 Tablespoon | |
| Cold Water | ||
Directions
Press all ingredients through a food chopper.
Sprinkle generously but not heavily with salt and let stand over night.
Drain and add: Cook with vegetables for 30 minutes.
Make a paste of the above ingredients.
Add to hot mixture and simmer for 2 minutes.
Pour into sterilized jars and seal.
