Cucumber Raita Recipe

Ingredients

 
Yoghurt – 1.2 ltr.
 
Cucumber – ½ kg
 
Salt – 25 g
 
Cumin – 20 g

Directions

• Whisk yoghurt in a bowl with a whisk till no grains are left in yoghurt.
• Add salt and whisk.
• Broil the cumin and crush it coarsely.
• Add this to the yoghurt and whisk.
• Peel the cucumber and grate the cucumber flesh only {not the seed.}
{please note that the cucumber has to be grated from the thick grate}.
• Mix the cucumber and the yoghurt with a spoon and not a whisk.

I love this recipe..very refreshing! i always used finely julienned cucumbers for this but never grated ..though how am I supposed to discard the seeds. do u mean to core them..? so much would be wasted then... :(

the middle bit on a cucumber is watery rubbish , cut the cucumber longways and run a tea spoon right down the length of the cucumber to remove the seeds.
