Cucumber Cottage Cheese Mold Recipe
The cucumber cottage cheese mold is a gelatin based mold. Combined along with cucumbers and their juice, the cucumber cottage cheese mold is made with grated onions and spiced with paprika and white pepper. Chilled and best served in a watercress bed, the cucumber cottage cheese mold is soft and mild to taste.
Ingredients
3 large cucumbers, peeled and seeded
1 Tbsp unflavored gelatin
1 tsp salt
2 Tbsp grated onion
1/2 tsp paprika
1/2 tsp white pepper
1 1/2 cups cottage cheese, drained and sieved
Directions
Grate cucumbers and strain, reserving juice.
Soften gelatin in cucumber juice and dissolve gelatin over a pan of hot water.
Season mixture with salt, grated onion, paprika and white pepper.
Cool until mixture begins to thicken.
Stir in cucumbers and fold in cottage cheese which has been put through a sieve.
Mix well and turn into a melon mold.
Chill until firm and unfold on a bed of watercress.
Serve with mayonnaise.
