Ingredients

 2 medium cucumbers, peeled, seeded and chopped
 Salt1 Teaspoon
 Olive oil1/4 Cup (16 tbs)
 Onions1/2 Cup (16 tbs), chopped
 1 medium tomato, peeled, seeded and chopped
 Garlic1 Clove (5gm), crushed
 Lemon juice1 Tablespoon
 Salt1/2 Teaspoon
 Pepper1/4 Teaspoon

Directions

Sprinkle cucumber with salt and let stand about 20 minutes with the weight of a plate on top.
Drain.
Rinse cucumber in cold water and pat thoroughly dry.
Heat oil in frying pan.
Cook gently, cucumber, onions, tomato and garlic, stirring occasionally, until moisture is nearly evaporated.
Stir in lemon juice, salt and pepper.
Chill.
Serve on melba rounds or crisp rye wafers.
