Cucumber Canoes Recipe

Ingredients
| Cucumbers | 3 Medium | |
| 1 c. cooked elbow macaroni | ||
| 1 12 oz. can luncheon meat, cubed | ||
| Carrots | 1/2 Cup (16 tbs), grated | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Vinegar | 2 Tablespoon | |
| Horseradish | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut cucumbers into halves lengthwise.
Scoop out pulp from each half, leaving a shell 1/4 inch thick.
Chop pulp; combine with macaroni, luncheon meat, carrots and green pepper.
Blend mayonnaise, vinegar and horseradish.
Add to meat mixture; toss lightly.
Season to taste with salt and pepper.
Pile salad into cucumber shells.
