Cucumber Yogurt Sauce Recipe
Cucumber yogurt sauce is a non cooked homemade sauce. Savory and flavorful, the cucumber yogurt sauce has a dash of sour cream with added veggies for taste. Flavored with parsley, mint and cumin, the cucumber yogurt sauce keeps well in the fridge.
Ingredients
1 medium size cucumber, peeled, seeded, and coarsely grated
1 medium size tomato, peeled, cored, seeded, and chopped
1/2 cup plain low fat yogurt
2 tablespoons sour cream
2 tablespoons minced fresh mint or 1 teaspoon mint flakes, crumbled
2 tablespoons minced parsley
1/2 teaspoon ground cumin
Directions
Place the cucumber on a double thickness of paper towels.
Press with the tines of a fork to remove the moisture, then transfer the cucumber to a small bowl.
Add the tomato, yogurt, sour cream, mint, parsley, and cumin, and mix well.
Store in a tightly covered jar in the refrigerator and shake well before each use.
