Ingredients

 
2 medium cucumbers
 
3 tablespoons dried shrimp
 
1-1/2 cups hot water
 
6 tablespoons vegetable oil
 
2 garlic cloves, crushed
 
1 teaspoon salt

Directions

Peel cucumbers and cut in half lengthwise.
Remove seeds and cut cucumber halves horizontally into 1/4-inch slices.
Soak dried shrimp in 1-1/2 cups hot water 10 to 15 minutes.
Drain well, reserving water.
Heat oil in a wok over medium heat 1 minute.
Stir-fry garlic until golden, 30 seconds.
Add drained shrimp.
Stir-fry 30 seconds.
Add cucumber slices.
Stir-fry 1 minute.
Stir in salt and 1/2 cup reserved shrimp soak water.
Cover and cook until water is absorbed by cucumber.
If cucumber slices are not soft, add a little more water and simmer a few minutes longer.
