Quick Cucumber Salad Recipe
Cucumber Salad is a delicious vegetable Salad that I often eat on days I think I should pull back on my calorie intake!! This delicious Cucumber Salad will be a success even if you serve it at a party. Trust me this Cucumber Salad is an all-rounder!
Ingredients
1/2 cucumber
2 teaspoons vinegar
1/4 teaspoon salt
Pepper
1 teaspoon oil
Directions
Skin the cucumber and slice in very thin rings.
Put in a soup plate.
Sprinkle the salt on top.
Put the bottom of another soup plate resting on the cucumber.
Put a 2 pound weight on top and leave for 1 to 2 hours.
Pour off the liquid that is drawn out of the cucumber and discard.
Dress the cucumber with the oil, vinegar, and pepper.
This treatment makes the cucumber very easy to digest.
