Cucumber Relish Recipe
Grandma's cookbook is one of the best places to find a delicious recipe, this Cucumber Relish is right out from there. Stock up on plenty of bags of Vegetable as you will want to make this Cucumber Relish time and again. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. I challenge you to give me a better recipe of Cucumber Relish than this.
Ingredients
1 1/2 cups (375 ml) cucumber, peeled, seeded, sliced
1/2 cup (125 ml) onion, sliced
1 green bell pepper, cut into strips
1 tbsp (15 ml) salt
4 oz (115 g) brown sugar
1 tbsp (15 ml) horse radish in vinegar
1 tsp (5 ml) old-fashioned mustard
1/4 tsp (1 ml) celery salt
1 cup (250 ml) tarragon or champagne vinegar
Directions
– Mix together cucumber, onions and green bell pepper. Season with salt and drain in a colander for 12 hours. Rinse.
– Chop vegetables in the food processor, then add other ingredients except vinegar and stir.
– Spoon mixture into jars. Add a thin layer of vinegar and refrigerate for 12 hours before serving.
