Ingredients

 Cucumbers12 Large, unpeeled
 Salt - as required
 Onions6
 Cider vinegar2 Cup (16 tbs)
 Sugar1 Cup (16 tbs)
 Ground cinnamon1 Teaspoon
 Ginger1 Teaspoon
 Mace1 Teaspoon
 Pepper white1/2 Teaspoon
 Turmeric1/2 Teaspoon
 Celery seeds1 Teaspoon

Directions

GETTING READY
1) In a crock or glass bowl, place the sliced cucumbers and sprinkle thoroughly with salt.
2) Allow the cucumbers to stand for 1 1/2 hours; drain thoroughly.

MAKING
3) In a kettle, combine the cucumbers with rest of the ingredients.
4) Cook the cucumber mixture for 10 to 15 minutes, or until the onions are tender.
5) In hot sterilized jars, spoon this 8 pints relish and seal the jars.

SERVING
6) Use the Cucumber Pickle Relish as required.
