Cucumber Julienne With Dill Recipe
Ingredients
| Cucumbers | 2 , peeled | |
| Oil | 2 Tablespoon | |
| Unsalted butter | 2 Tablespoon | |
| 2 tablespoons chopped fresh dill fronds | ||
| Juice of 1/2 lemon | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut the cucumbers into 2-inch pieces, and cut each piece into matchsticks.
Place in a colander.
Sprinkle with salt and leave to drain for 30 minutes.
Rinse the cucumber under cold water and pat dry.
Heat the oil and butter in a frying pan and add the cucumber, half of the dill and seasoning.
Cook, stirring, for 2 minutes.
Squeeze over the lemon juice.
Serve, hot or warm, with the remaining dill laid over the surface of the cucumber.
