 Hummus
 Yellow onion1 Small, sliced
 1/2 English cucumber, peeled, halved, seeded, and sliced
 Chickpeas1 Can (10oz), drained, rinsed
 1 large clove garlic
 Tahini1 Tablespoon
 Juice of 1 lemon (about 3 tablespoons)
 Salt1/4 Teaspoon
 Pizza
 4 whole wheat flour tortillas (8" diameter)
 1/2 English cucumber, thinly sliced into rounds
 4 plum tomatoes, seeded and diced

Directions

To make the hummus: In a blender or food processor, combine the onion, cucumber, chickpeas, garlic, tahini, lemon juice, and salt.
Process for 3 minutes, or until smooth.
To make the pizza: Preheat the oven to 400°F.
Coat both sides of the tortillas with olive-oil cooking spray.
Place the tortillas on baking sheets, working in batches if necessary, and bake for 8 minutes, or until the tortillas are lightly browned and crisped on each side.
Evenly divide the hummus among the tortillas.
Top with the cucumber and tomatoes.
