For hummus
 Yellow onion1 Small, sliced
 English cucumber1⁄2 , peeled, halved, seeded and sliced
 Canned chickpeas15 1⁄2 Ounce, rinsed and drained (1 Can)
 Garlic clove1 Large
 Tahini1 Tablespoon
 Lemon1 , juiced to make 3 tablespoons

For pizza
 8 inch flour tortillas4 (Whole Wheat Variety)
 English cucumber1⁄2 , thinly sliced into rounds
 Plum tomatoes4 , seeded and diced

To make the hummus: In a blender or food processor, combine the onion, cucumber, chickpeas, garlic, tahini, lemon juice, and salt.
Process for 3 minutes, or until smooth.
To make the pizza: Preheat the oven to 400°F.
Coat both sides of the tortillas with olive-oil cooking spray.
Place the tortillas on baking sheets, working in batches if necessary, and bake for 8 minutes, or until the tortillas are lightly browned and crisped on each side.
Evenly divide the hummus among the tortillas.
Top with the cucumber and tomatoes.
