| 1/2 English cucumber, peeled, halved, seeded, and sliced | ||
| Chickpeas | 1 Can (10oz), drained, rinsed | |

| Tahini | 1 Tablespoon | |
| Juice of 1 lemon (about 3 tablespoons) | ||

| Pizza | ||
| 4 whole wheat flour tortillas (8" diameter) | ||
| 1/2 English cucumber, thinly sliced into rounds | ||
| 4 plum tomatoes, seeded and diced | ||
Directions
To make the hummus: In a blender or food processor, combine the onion, cucumber, chickpeas, garlic, tahini, lemon juice, and salt.
Process for 3 minutes, or until smooth.
To make the pizza: Preheat the oven to 400°F.
Coat both sides of the tortillas with olive-oil cooking spray.
Place the tortillas on baking sheets, working in batches if necessary, and bake for 8 minutes, or until the tortillas are lightly browned and crisped on each side.
Evenly divide the hummus among the tortillas.
Top with the cucumber and tomatoes.
