Cucumber Chutney Recipe
|English cucumber||1 , peeled, seeded, and finely shredded|
|Nonfat yogurt cheese||1⁄2 Cup (8 tbs)|
|Minced onions||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Chopped fresh mint||1 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Ground black pepper||To Taste|

Sprinkle lightly with the salt and allow to drain for at least 30 minutes.
Rinse the cucumber with cold water, squeeze dry, and transfer to a medium bowl.
