Cucumber-Cheese Slices Recipe
Ingredients
2 packages (3 oz. each) soft chive cream cheese
1/4 cup finely chopped pimiento-stuffed olives, well drained
4 small, thin cucumbers (about 5 inches long), peeled
Directions
Blend cream cheese with olives.
Cut tapered ends off each cucumber and hollow by scooping out all the seeds with a knife or apple corer.
Pack the hollow of each solidly with a fourth of the cream cheese mixture.
Wrap each cucumber in plastic film, and chill thoroughly.
Cut crosswise in 1/3-inch slices.
