Cucumber Cabbage Mold Recipe

Ingredients

 2 3-ounce packages lime-flavored gelatin
 Boiling water2 Cup (16 tbs)
 Cold water1 3/4 Cup (16 tbs)
 Vinegar2 Tablespoon
 Prepared horseradish1 Teaspoon
 Salt1/2 Teaspoon
 1 large unpared cucumber
 Cabbage1 Cup (16 tbs), chopped

Directions

Dissolve gelatin in boiling water.
Stir cold water, vinegar, horseradish, and salt into dissolved gelatin.
Chill till partially set.
Pour 1/2 cup of the gelatin mixture into 5 1/2 cup ring mold.
Cut 10 to 15 paper-thin slices of unpared cucumber and arrange on gelatin in mold.
Chill till almost firm.
Dice enough unpared cucumber to make 1 cup; fold cucumber and chopped cabbage into remaining partially set gelatin.
Carefully pour cabbage mixture over almost firm gelatin layer.
Chill till firm.
Pass mayonnaise, if desired.
