Cucumber Cabbage Mold Recipe
The cucumber cabbage mold is a simple vegetable mold made with lime gelatin. Tangy with horseradish for taste, the cucumber cabbage mold is flavorful and refreshing. Served between the courses, it is an excellent palate cleanser.
Ingredients
| 2 3-ounce packages lime-flavored gelatin | ||
| Boiling water | 2 Cup (16 tbs) | |
| Cold water | 1 3/4 Cup (16 tbs) | |
| Vinegar | 2 Tablespoon | |
| Prepared horseradish | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 1 large unpared cucumber | ||
| Cabbage | 1 Cup (16 tbs), chopped | |
Directions
Dissolve gelatin in boiling water.
Stir cold water, vinegar, horseradish, and salt into dissolved gelatin.
Chill till partially set.
Pour 1/2 cup of the gelatin mixture into 5 1/2 cup ring mold.
Cut 10 to 15 paper-thin slices of unpared cucumber and arrange on gelatin in mold.
Chill till almost firm.
Dice enough unpared cucumber to make 1 cup; fold cucumber and chopped cabbage into remaining partially set gelatin.
Carefully pour cabbage mixture over almost firm gelatin layer.
Chill till firm.
Pass mayonnaise, if desired.
