Cucumber And Tomato Raita Recipe
Ingredients
| Cucumber | 1 Large | |
| Salt | 1 Tablespoon | |
| Onion | 1 Small, minced | |
| 2 tomatoes, cut into 1/4-inch dice | ||
| Coriander/ cilantro | 1 Tablespoon, minced | |
| Cayenne pepper | 1/8 Teaspoon | |
| 1 cup plain low-fat yogurt | ||
Directions
1. Peel, seed and cut the cucumber into 1/4-inch dice. Mix it with the salt and let stand 15 minutes, then squeeze out excess water. Place the cucumber in a medium bowl.
2. Add the onion, tomatoes, fresh coriander, cayenne and yogurt and mix well. Chill for 1 or 2 hours to let the flavors combine.
