Cucumber And Grapefruit Mold Recipe
Ingredients
| 1-pound can grapefruit sections | ||
| 1 envelope plain gelatin | ||
| Sugar | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Vinegar | 1 Tablespoon | |
| Few drops green vegetable coloring | ||
| Cucumber | 1 Cup (16 tbs), peeled | |
Directions
1.
Drain the syrup from the grapefruit sections and add enough water to make 1 3/4 cups liquid.

Mix this liquid with the gelatin, sugar, and salt, and stir over low heat until the gelatin is dissolved.
3.
Stir in the vinegar and a little green food coloring.
Chill to the consistency of unbeaten egg whites.

Fold in the cucumber and grapefruit, pour into a ring mold rinsed out in cold water, and chill until firm.
Unmold on a chilled platter and serve with mayonnaise.
