Directions

Put all the ingredients in a bowl and squeeze out the orange juice.

Then put in some extra virgin olive oil.

Take a whisk and make a paste out of it. Add more oil if required.

Take the Boston butt meat in a big bowl.

Take the paste and apply it all over the roast. Use your hands to rub the paste all over the meat.

It can be kept overnight if required.

Take a Dutch oven an put some olive oil in it. Place the pork inside and cook in 225 to 300 degrees until the pork is tender and the internal temperature is 185 degrees.

And Cuban pork roast is ready to serve with saffron rice and black beans.

Cut a nice chunk of the pork roast and drizzle some sofrito over it while serving with saffron rice and black beans.
