Directions
Set aside.
To make a rose color, place one drop of red food coloring in some of the sugar and mix until well blended.To make the green color for the mint leaf, place one drop of green food coloring in some more sugar and mix until well blended.
To crystalize the small roses, dip them in the egg white, then the red colored sugar, spear the petals on a fork and place on a waxpaper-lined baking sheet to dry.
Separately dip each rose petal or mint leaf into the egg white mixture.
Drain well and dip into the colored sugar.
Place on a waxpaper-lined baking sheet and set inside an unlit oven to dry overnight.
Remove and store in covered plastic ware to use to garnish puddings, mousses and cakes.
