Crustless Asparagus Quiche Recipe
I love this Crustless Asparagus Quiche recipe for it brings such rave reviews everytime I make it. Ingredients
1 tbsp (15 mL) butter
1 large onion, peeled and thinly sliced
1 lb (500 g) asparagus, cut into 1 inch (2.5 cm) pieces
1/2 cup (125 mL) Cheddar cheese, grated
4 eggs
1/2 tsp (2 mL) dried tarragon
1 tbsp (15 mL) butter, melted
1/2 cup (125 mL) wholewheat breadcrumbs
Directions
Melt the butter in a 9-inch (23 cm) ceramic pie plate 1 minute at HIGH.
Add the onion, stir well.
Microwave 2 minutes at HIGH.
Scatter the cut asparagus over the onion.
Stir together.
Cover dish with a lid or waxed paper, microwave at HIGH 4 minutes.
Sprinkle the whole with the grated cheese.
Beat the eggs.
Add the tarragon and pour over the asparagus.
Melt the butter 1 minute at HIGH, add the bread crumbs.
Sprinkle over the eggs.
Place the dish on a rack.
Microwave at MEDIUM-HIGH 12 to 15 minutes or until puffed and cooked.
Add the onion, stir well.
Microwave 2 minutes at HIGH.
