Classic Crustless Spinach Quiche Recipe
Ingredients
| Chopped spinach | 1 10 Ounce | |
| Green onion | 1 Bunch (100gm), chopped | |
| Eggs | 4 standard | |
| 1 16-ounce carton low-fat cottage cheese | ||
| Mild cheddar cheese | 2 Cup (16 tbs) | |
| 1/4 cup crouton crumbs | ||
Directions
Cook spinach according to package directions, and squeeze to remove liquid.
Combine spinach, green onions, eggs, cottage cheese and cheddar cheese.
Put into a quiche pan or 10-inch pie plate treated with nonstick spray.
Cover with foil, and freeze.
Put crouton crumbs in a 1-quart bag, and tape to pie plate.
To prepare for serving, thaw pie and crumbs.
Bake uncovered in a preheated 325° oven for 1 hour, adding crouton crumbs the last 15 minutes.
