Ingredients
| Red bell pepper | 1/4 Cup (16 tbs), chopped | |
| Onion | 2 Tablespoon, chopped | |
| Olive or Vegetable oil - 1 teaspoon | ||
| Frozen imitation fish - 4 ounces, thawed | ||
| Whole milk | 1 Cup (16 tbs) | |
| Eggs | 2 | |
| Instant non-fat dry milk powder - 3 tablespoons | ||
| Pepper white | 1/8 Teaspoon | |
| Ground nutmeg - A dash | ||
| Muenster cheese | 2 Ounce, shredded | |
| Tomato slices | 4 | |
Directions
MAKING
1) Use non-stick cooking spray to coat an 8-inch microwavable pie plate.
2) Add the onion, bell pepper and oil and stir well to coat.
3) Microwave on HIGH (100%) for 1 minute, till the vegetables are tender.
4) Add the imitation fish and stir well to combine.
5) Over the bottom of the pie plate, spread the mixture.
6) With a wire whisk, beat together the whole milk, milk powder, eggs, pepper and nutmeg in a small mixing bowl. Add 1 ounce of cheese and stir well.
7) Over the fish mixture in the pie plate, pour the milk mixture.
8) Microwave on MEDIUM-HIGH (70%) for 12 minutes. Every 5 minutes, rotate the pie plate ½ turn till the quiche is set.
9) On the quiche, decoratively arrange the tomato slices and sprinkle the remaining 1 ounce of cheese all over.
10) Microwave the quiche on MEDIUM_HIGH for 2 minutes, till the cheese has melted. Allow to stand for 5 minutes.
SERVING
11) Serve the quiche hot or let it cool for a little bit longer and serve at room temperature. Makes a good main dish when served with a light, green salad on the side.
