Crustacean Stock Recipe

Ingredients
Large scallion - 1
Medium sized carrot - 1
Small celery stalk - 1
Parsley stalks - 20
Small green chili pepper - 1
Shrimp heads and shells - 2-2 1/4 Lb
Thyme - 2 sprigs
Bay leaf - 1
Fennel seeds - Small pinch
Mild curry powder - 1/4 tsp
Dry vermouth or dry white wine - 1 cup
White peppercorns - 10
Coarse sea salt
Directions
GETTING READY
1 Peel and trim the scallion, carrot, and celery.
2 Slice finely.
3 Cut the parsley stalks into small pieces.
4 Remove the seeds and stalk from the green chili pepper and slice into thin rings.
MAKING
5 In a large pot, place all the ingredients together.
6 Add in 1-quart cold water and 1 tsp coarse sea salt.
7 Bring to a boil over gentle heat.
8 Gently simmer, uncovered for 20 minutes.
9 Strain through a fine mesh sieve.
SERVING
10 Use as desired
