Crunchy Peanut Butter And Jelly Muffins Recipe
These crunchy peanut butter and jelly muffins gives you the sweet taste and crunchy texture in a very homey recipe. An old household favorite of mine, these crunchy peanut butter and jelly muffins can liven up any boring evening into a fun filled family time to remember.
Ingredients
| All purpose flour | 2 Cup (16 tbs) | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Baking powder | 21/2 Teaspoon | |
| 1/2 tsp salt 2mL | ||
| 3/4 cup crunchy peanut butter 175 mL | ||
| Milk | 3/4 Cup (16 tbs) | |
| Eggs | 2 Small | |
| 1/4 cup jam or jelly 50 mL | ||
Directions
Preheat oven to 200 degrees C.
In a large bowl, mix together flour, sugar, baking powder and salt.
With a pastry blender or two knives, cut in peanut butter until mixture resembles coarse crumbs.
Add milk and eggs all at once, stirring just until moistened and blended.
Spoon 2 tbsp (25 mL) batter into each prepared cup.
Put 1 tsp (5 mL) jam or jelly in center of each.
Top with another 2 tbsp (25 mL) batter.
Bake in preheated oven for about 20 minutes.
HINT: Use muffin tins to make extra-large ice cubes for punch.
