Crunchy Salad Recipe

Crunchy Salad has got more than what you would look forward in a salad. I use this Crunchy Salad recipe throughout the year, irrespective of the seasons. Enjoy preparing!

Ingredients

 
1 tbsp (15 ml) butter
 
3/4 CUP (180 ml) mush rooms, chopped
 
3/4 CUP (180 ml) celery, diced
 
1 1/2 cups (375 ml) pork meat, cooked, diced
 
2 tbsp ( 30 ml) green bell pepper, diced
 
2 tbsp (30 ml) slivered almonds
 
1 medium red apple, unpeeled, diced
 
1/4 tsp (1 ml) salt
 
Pepper
 
1/4 CUP (60 ml) vinaigrette or mayonnaise
 
4 leaves Boston lettuce, washed, dried
 
1 tomato, sliced
 
1/2 cucumber, sliced

Directions

–  In a skillet, melt butter; cook mushrooms and celery until slightly golden. Let stand to cool.
–  Add pork meat, pepper, and almonds, stir lightly and set aside.
–  When ready to serve, add diced apple. Season with salt and pepper. Coat with dressing. Toss gently.
–  Arrange mixture on a bed of lettuce leaves. Garnish with tomatoes and cucumbers.
