Crunchy Oven Fried Haddock Recipe
Ingredients
| Haddock fillets | 1 Pound | |
| Salt, pepper and paprika | ||
| All-purpose flour | ||
| Cornflakes | 2 Cup (16 tbs) | |
| Egg | 1 , beaten | |
| Vegetable oil | 1/2 Tablespoon | |
Directions
Cut fillets into serving-size pieces. Sprinkle lightly with salt, pepper and paprika. Dust lightly on all sides with flour.
Place cornflakes in sturdy plastic bag; roll gently with rolling pin to crush finely. Place cornflakes in shallow dish.
In separate shallow dish, beat together egg and 1 Tb (15 mL) oil. Dip fish in egg mixture, then press into cornflake crumbs to coat evenly. Press firmly to make crumbs adhere to fish.
Arrange fish on well-oiled baking sheet in single layer.
Drizzle fish with a little oil. Bake, uncovered, in 450F (230C) oven 6 minutes. Turn fish over with spatula; bake 2 to 3 minutes or until crisp, and fish flakes easily with a fork.
