Ingredients

 1 pound frozen perch or other fish fillets, thawed
 Salt1/4 Teaspoon
 All purpose flour3/4 Cup (16 tbs)
 Egg1 , beaten
 Water3 Tablespoon
 Saltine crackers 30 To taste, crushed
 Vegetable oil

Directions

Sprinkle fillets with salt, and dredge in flour.
Combine egg and water, mixing well.
Dip floured fillets in egg mixture, and coat with cracker crumbs.
Fry in hot oil (360°) over medium heat until browned.
Drain
