Crumpets Recipe

I got to try out this crumpets at my friend's place. My God, it was simply mind blowing! The european couldn't have come up with a better dish than this crumpets, specially when it comes to culinary creativity. This crumpets is always a hit as a side dish . Once tasted, I am sure you would love to prepare this crumpets recipe for your dear ones!

Ingredients

 
3 cups sifted all-purpose flour
 
1/2 cake compressed yeast or 1 1/2 teaspoons active dry yeast
 
1 3/4 cups warm water
 
1/2 teaspoon baking soda
 
2 teaspoons salt
 
3/4 cup warm milk

Directions

Blend the flour, compressed or dry yeast and warm water together in a large mixing bowl.
Cover with a sheet of oiled plastic wrap and setaside until very light and frothy, about 1 hour in a warm place.
Add the baking soda and salt to the warm milk and stir into the batter, adding a little extra milk if necessary to give a runny batter.
Cover again and stand until frothy, for about 30 minutes to 1 hour in a warm place.
Heat a griddle or heavy frying pan and very lightly grease the surface.
Grease crumpet rings, or 3-3 1/2-inch plain metal cookie cutters.
Place the rings on the hot griddle or frying pan.
Pour about 2 tablespoons of the batter into each ring.
Turn down the heat and cook gently for about 10 minutes or until the crumpets are well set and the bubbles have burst.
Remove the rings, turn the crumpets over and cook for a further 2-3 minutes until they are a pale golden brown and thoroughly dried.
Repeat until all the batter has been used up.
