Crumpets Recipe

Ingredients
1/2 oz. fresh (compressed) yeast
1 pint warm milk
1 lb. strong plain (all-purpose) flour
1 teaspoon salt
1/2 teaspoon bicarbonate of soda
Directions
Cream the yeast with 3 tablespoons of the milk.
Sift flour and salt into a warmed bowl and make a well in the centre.
Pour in the yeast and remaining liquid.
Beat well for 5 minutes then cover and leave in a warm place for 1 hour until risen.
Dissolve the bicarbonate of soda in a little warm water and pour onto the spongy batter.
Beat for 3-4 minutes.
Cover and leave in a warm place for 45 minutes.
Grease a griddle or heavy frying pan (skillet) and 6 crumpet rings or 3 inch plain metal cutters.
Heat the griddle over a low to moderate heat.
Pour about 2 tablespoonfuls (3T) of the batter into each ring and cook each crumpet until the top has set and the bottom is golden brown.
