Crumble Baked Apples With Calvados Recipe
|6 cooking apples|
|Apricot jam||6 Tablespoon|
|6 to 8 macaroons, crushed|
|6 teaspoons Calvados or other brandy|
Peel the apples, and trim and even bases if necessary, to make them stand upright. Remove the cores without piercing apples completely so that there is a base in the centre hole. Cut the butter into 6 even pieces. Arrange the apples in a large baking dish and fill the centre of each hole with a piece of butter and a teaspoon of sugar. Add about 1cm of water to the pan, cover it with buttered paper and bake the apples in a moderate oven 180C (350F) until they are almost tender, 30 minutes or more depending on the ripeness and type of apple. Melt the jam and brush it on the apples. Sprinkle them with macaroon crumbs and put 1 teaspoon brandy in the centre of each. Bake 5 minutes more, or until tender. Serve hot with chilled pouring cream.
