| Milk | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| 1/2 cup fine dry bread crumbs | ||
| Paprika | 1 Teaspoon | |
| 1 1/2 pounds flounder, sole, halibut, cod, or haddock fillets | ||
| Butter/Margarine | 4 Tablespoon, melted | |
| Lemon | 1 | |
Directions
1. Adjust the oven rack to slightly above the middle of the oven, and preheat the oven to 500°F. Put the milk into a shallow bowl or pie plate, and stir in the salt. Mix the bread crumbs with the paprika on a plate or a sheet of wax paper. Dip the fish fillets into the milk, then coat with the bread crumb mixture. Place the fillets in a single layer in a buttered 8"x8"x2" baking dish.
2. Pour the melted butter over the fillets. Bake, uncovered, for 5 minutes or longer, depending on the thickness of the fish. When the fish flakes easily when tested with a fork it is done. Garnish with the lemon wedges if desired. Serve with Coleslaw, or Spinach-Bacon Salad with Warm Dressing.
