Crudites With Peanut Butter Dip Recipe
This peanut butter dip is a fruity vegetable dip. Prepared with vegetables with added banana and apple juice to taste, the peanut butter dip is peppy and a little fruity.
Ingredients
| 1 medium size carrot, peeled and cut into matchstick strips | ||
| 1 medium size stalk celery, cut into matchstick strips | ||
| 8 snow peas or green beans, trimmed | ||
| Radishes | 3 , trimmed | |
| 1/2 medium size banana, peeled | ||
| Peanut butter | 1 Tablespoon | |
| 1/4 cup unsweetened apple juice | ||
| Lemon juice | 1 Teaspoon | |
Directions
Wrap the carrot, celery, snow peas, and radishes separately in plastic wrap or aluminum foil.
Place the banana, peanut butter, apple juice, and lemon juice in an electric blender or food processor.
Whirl for 10 to 15 seconds or until smooth.
Pour into a small plastic container, place plastic wrap directly on the surface of the mixture to prevent discoloration, and snap on the lid.
Refrigerate until ready to pack.
