For six persons purchase 6 ribs from each side of a rack of loin of pork, each rib being trimmed in the same way that lamb chops are "Frenched" without separating the ribs.
Ask the butcher to trim the pieces of meat so that the bones are on the Outside., together in a circle.
Sprinkle the crown with salt, pepper to trim little powdered sage, and roast in a covered roaster if possible in a very hot oven of 500° F. for 30 min., then in a moderate oven of 350° F. for the remaining time, allowing 30 min. to the pound.
Serve with mashed potatoes, buttered onions, spinach, cauliflower, or brussels sprouts in the center.
