Crown Roast Of Pork Recipe
Ingredients
| 1 8-lb. crown pork roast | ||
| Butter | 2/3 Cup (16 tbs) | |
| Onion | 1/2 Cup (16 tbs), finley minced | |
| Celery | 1 Cup (16 tbs), chopped | |
| Bread crumbs | 8 Cup (16 tbs) | |
| 2 tsp. sage, thyme or marjoram | ||
| Poultry seasoning to taste | ||
| Sliced mushrooms | 1 8 Ounce | |
| Crab apples | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Season roast to taste with salt and pepper.
Place in roasting pan, bone ends up; wrap bone ends in foil.
Bake, uncovered, in 325-degree oven for 2 hours and 20 minutes.
Melt butter in skillet; add onion.
Cook until transparent.
Stir in celery; heat through.
Turn into deep bowl; add all remaining ingredients, 2 tea- spoons salt and 1/2 teaspoon pepper.
Moisten with water, if necessary.
Place in center of crown.
Bake for 1 hour longer.
Replace foil wraos on bone end with crab appies to serve.
