Crown Room's Shrimp Stuffed Catfish Recipe
Ingredients
| Onion | 1 Small | |
| Green onions | 3 | |
| Mushrooms | 1/4 pound, chopped | |
| Butter/Margarine | 3 Tablespoon | |
| Breadcrumbs -1/2 cup, soft | ||
| Parsley | 2 Tablespoon, chopped | |
| Lemon | 1/2 | |
| Catfish fillets -6 (7- to 9-ounce) | ||
| Shrimp | 1/2 pound | |
| Swiss Cheese | 3/4 Cup (16 tbs) | |
| Paprika | ||
| Butter/Margarine | 1/3 Cup (16 tbs) (For Sauce) | |
| All-purpose flour -1/3 cup | ||
| Milk | 2 3/4 Cup (16 tbs) (For Sauce) | |
| Dry white wine -1/3 cup Egg -2, yolks | ||
| Dry mustard | 1/2 Teaspoon (For Sauce) | |
| Red pepper -dash | ||
Directions
MAKING
1)Saute onions and mushrooms in butter till it turns tender.
2)In addition add breadcrumbs, parsley, and lemon juice ,mix it well.
3)In the center of each fillet spread two tablespoons of stuffing mixture and top it with shrimp.
4)Roll each fillet and secure it with a wooden pick.
5)In an individual baking dish keep bottom side of the fillets towards the dish.
6)To prepare sauce, use a heavey sauce pan and melt butter adding flour into it.
7)Stir constantly and slowly add milk and wine in the mixture and let it cook.
8)In the meantime beat egg yolks until thick and lemon colored.
9)Add some hot mixture into yolks and cook till it becomes thick.
10)Mix mustard and red pepper in the sauce.
11)Pour about 1/2 cup of sauce over each fillet.
FINALIZING
7)Bake at 350° for 25 minutes and sprinkle with cheese, and bake an additional 3 minutes or until cheese melts.
SERVING
8)Before serving sprinkle with little paprika.
